Assam is a potpourri of traditional cuisines, spanning across several indigenous communities. Each community has its own traditional recipes that have withstood the test of time and continue to be popular through generations. The presence of a wide range of traditional recipes has given Assam a unique identity of its own.

A recipe is not only a mere permutation and combination of ingredients; it is an emotion and a living example of our glorious heritage. In recent times, traditional recipes are garnering the much needed attention across many social media platforms. More and more people are now inclined towards including local herbs, spices, vegetables and fruits in their diet. This has resulted in successfully shifting the focus from mass produced ingredients to seasonal/local items grown in the state.

If you are a food enthusiast and love to experiment with traditional recipes of Assam, then share your recipes along with pictures with us. Out of these, 10 recipes will be featured across various social media platforms of MyGov Assam. Winners will also receive certificates of appreciation.

Last date of submission: April 10

Requirements: Individual name, contact details, recipe name and recipe photo.

ৰেচিপীৰ নাম: খাৰ আৰু পিঠাগুৰি ৰ সৈতে কলপচলা

কল পচলা বহু ৰোগত উপকাৰী ।ইয়াত প্ৰচুৰ পৰিমাণে আঁহ আছে। ইয়াৰ উপৰিও ভিটামিন B6, পটাচিয়াম, আইৰণ আদি পোৱা যায়।
ৰেচিপী: পোনপ্ৰথমে পচলাখিনি মিহি মিহিকৈ কাটি ললো। তাৰপিছত কেৰাহীত তেল আৰু সৰিয়হ অলপ দি বহাই দিলো।কিছুসময় পিছত কলাখাৰ দি দিলো।তাৰ অলপ সময় পিছত পিঠাগুৰি দি দিলো। একেবাৰে শেষত আদা-নহৰু আৰু জলকীয়া দি দিলো আৰু নমাই থলো

Pura Goroi Maas Pitika

Ingredients:
Goroi Maas: 200 gram
One onion: finely chopped.
Fresh chilli: 3 chopped.
Salt to taste.
Mustard oil : 1 tbsp.
Coriander leaves & Lemon juice : 2 tsp.
Process:
To prepare pura mach/roasted fish pitika, directly throw the fishes in hot charcoal or grilled it in low gas flame. Once it done, let them cool for few minutes. Next remove the main bone & head and clean properly. Now mash the fish with all ingredients & Enjoy.

Fish in mustard sauce(In microwave)
Recipe:
Fish cut Bengali cut (2-4 pieces)
2 tbsp mustard seeds ground into a fine paste
1 tbsp oil
1tsp salt
1-2 green chillies
1-2 leaves of wild coriander ( maan dhoniya)
1 onion (create a paste)
1 tsp garlic paste
Method:
In a baking tray,put oil and let it heat for 2-3 mins in a convection combo mode 210•c
Now,mix in the onion paste & garlic paste with the oil , heat for 3 min
Add fish,bake for10mins
Garnish with green chilly& coriander

নৰসিংহ, আলু আৰু মাছৰ জোল--
প্ৰথমতে দুইপিছ মাছ আধা ভজাকৈ উঠাই থলোঁ। দুটা আলু সিজাই লৈছো। নৰসিংহ পাতখিনি ভালকৈ ধুই বতি লৈ পানী মিক্স কৰি অলপ উতলিবলৈ দিলোঁ। এতিয়া কেৰাহীত দুই চামুচ মিঠাতেল গৰম হবলৈ দি তাত আগতেই কুটি ৰখা পিয়াঁজ, আদা -নহৰু বতা, জিৰা ধনীয়া গুৰি আধা চামুচ, অলপ হালধি দি ভালকৈ ভাজি কাটি ৰখা বিলাহী এটা দি ভালকৈ ভাজি , আন্দাজমতে নিমখ , তাত সিজোৱা আলুখিনি অলপ ভাঙি দি উতলাই ৰখা নৰসিংহ-পানীৰ মিশ্ৰনখিনি আৰু মাছ দুইপিছ দি ঢাকি থলোঁ। ভালকৈ উতলাত নমাই থলোঁ।

উপকৰণ সমূহ-
আধামুঠি টেঙেচী শাক
দুটা সিজাই লোৱা আলু
2 চামুচ মিঠাতেল
1/3 চামুচ হালধি
সোৱাদ অনুসৰি নিমখ
আধা চামুচ সৰিয়হ
প্ৰণালী-
প্ৰথমতে টেঙেচী শাক খিনি ভালকৈ বতি লৈ সিজাই দুই গিলাচ পানী যোগ কৰি 10 মিনিট গৰম কৰি লৈছো। এতিয়া কেৰাহীত 2 চামুচ মিঠাতেল দি সৰিয়হ খিনি দি ফুটিব দিছো। সিজোৱা আলুখিনি হাতেৰে অলপ ভাঙি দি তেল ত দি 2মিনিটমান হালধি, নিমখ দি অলপ সময় ভাজি তাত গৰম টেঙেচী শাক-পানী খিনি ঢালি দিছোঁ। পিছত ভালকৈ উতল অহাত নমাই থলোঁ ।
