Assam’s ethnic cuisine has a special identity of its own. Different tribes and communities across the diverse land have their own unique traditional cuisines that add to the richness of Assam’s traditional food culture. On the occasion of World Photography Day, MyGov Assam conducts a photography competition based on the theme of Assam’s ethnic cuisine.
Top five photographs shall be showcased in different social media handles of MyGov Assam and the photographers of top five entries shall be presented certificates signed by Hon’ble Chief Minister Shri Sarbananda Sonowal.
Last date of submission: September 9, 2019
Terms & conditions:
One person can enter only up to 5 photographs
Photographs must be of high resolution
Mobile photographs shall also be entertained
Photographs should be sent along with details
Entry must include name, address and contact number of the photographer
Photographers of top five photographs shall be presented certificates duly signed by Hon’ble CM Shri Sarbananda Sonowal
MyGov Assam will reserve rights of all submitted photographs

Chicken Dry Fry
We assamese people love chicken a lot. If there is no meat, our days doesn't even start. Chicken dry fry is one of everyone's favorite. You have to cut the chicken into medium pieces, fry it with onions, masalas, potatoes and some herbs if you want. You need to cook it in mustard oil and garnish it with coriander leaves at last. You should constantly keep stir frying it and cover it with a lead to let it cook well.
You can have it with rice or roti or just the fry!

Chicken Pokori
(Chicken fritters)
This is something you will find all over India but we assamese people cook it in our own style. The chicken is boiled after cutting it into tiny pieces. The bones are removed. In a bowl, we add besan, salt, red chilli powder and some turmeric. We add little masala in the chicken and dip it in the mixture and then fry it in refine oil.
At last we cut a lemon and some coriander leaves and add it in on the plate. A few drops of lemon on the pakodas in yummy.

Khulasapori Pitha
Assam is famous for its Pithas and Ladoos. One of the easiest and delicious pitha among them is the Khulasapori Pitha. It is also known as Pani Pitha and there is a lot of names of it throughout the state. This is a very healthy breakfast and evening snack as it is only made out of rice powder, salt and water. A few drops of mustard oil definitely enhances the taste of it.
Just have with honey, jam or jaggery. You will definitely never forget the taste of this dish.

Haahor Mangkho
(Duck Meat)
If you are an assamese then you definitely know how awesome this dish is. The fresh duck Meat is cooked with potatoes, onion, garam masalas, ginger, garlic and lots of spices. Again mustard oil enhances the taste. It takes a lot of time to get cooked but once its ready, you won't be able to stop yourself from eating it till you feel full. Duck Meat is famous in Assam from its historical context too. Earlier, chicken was not popular so people preferred Duck over it.

Koldil Bhaji
(Banana flower fries)
The most authentic assamese cuisine you will ever find will be the Koldil Bhaji. It is healthy and extremely delicious. The method of cooking is very simple and it is a good source of Iron.
Every Assamese person craves for this mouthwatering dish and longs for it when they stay away from their home.
Cut the Banana flower and some potatoes (not mandatory), cut onion and fry it in mustard oil till it is fully cooked. Add salt and turmeric and it's done.

This dish is very popular amongst the Assamese people and it can be prepared with any variety of fish, big or small. The Elephant apple can also be consumed with Pork or Chicken, can be made into pickles, or added to Dal (which we usually do) to emanate a tangy taste. This fruit is known to be very nutritious and full of antioxidants, due to which we never lose a chance to use it as an ingredient in our dishes.
